Thyme Tea
Thyme tea gives courage to the heart and slows the aging process.
My favorite cup of thyme tea was the one I had when horseback riding in Provence, where I found a bundle of freshly-picked thyme beside my teacup at breakfast.
Place 1 teaspoon of dried thyme (or a handful of fresh thyme) per cup in a teapot.
Fill the teapot with boiling water.
Cover tightly.
Let steep 2-3 minutes.
Stir in one teaspoon of honey per cup.
Serve in your prettiest cups with seed cakes or cookies.
